Guilt Free Treats...Not So Naughty Balls!

This morning I have been busy in the kitchen rustling up some guilt free treats for my Saturday Morning Fitness Crew, I haven't come up with a name for them yet I'm going to leave that up to my lovely Clients tomorrow morning so the name for these yummy treats will be posted up tomorrow :)

Anyway heres the recipe!

Makes approx. 26 balls

Ingredients:-

66g Sultanas
200g Dates
66g Pumpkin Seeds
66g Sunflower Seeds
Drizzle of Honey - to taste
2 teaspoons of Cocoa Powder

(Decoration - Coconut and a mix of Linseed, Goji Berries, Sunflower seeds)

Method:-

Measure out the ingredients.
Soak your dates in water for around 15mins to soften.
After the 15mins drain the dates and put all of the ingredients into your food processor.
Blend until it turns into a sticky mixture.
Then roll into small ball shapes and place onto to some baking paper or a plate.
Then when you have rolled all the mixture into the ball like shapes make a little heaped mixture of Coconut and the Linseed, Goji Berry, Sunflower Seed mix. Roll your balls in the mixture for decoration.

And there you go a totally guilt free treat thats yummy and sure to hit them sweet cravings!

Enjoy!

HAPPY CAKES

At the moment I have a really sweet tooth...you know the feeling right? Thought so....sooooo to stop me reaching for them high in sugar naughty treats I make these little beauties and they are delicious!!! They can be eaten as a breakfast or as a dessert, have a go I guarantee you will love them.

INGREDIENTS:

1 banana
1 egg
Cinnamon to taste (optional)
Mixed Berries
Coconut Oil/Olive Oil

Makes approx. 3 Happy Cakes

METHOD:

Whisk your egg and mash your banana then mix the two together. Then add as much or as little cinnamon (or none at all if you do not like it) to the mixture and stir. Heat your frying pan to a medium heat and heat the coconut oil (ideally coconut oil but if you don't have this then olive oil is fine). Then pour your mixture into the frying pan into small circle like shapes. Then add as many berries as you like to the pancakes. Flip and cook on both sides and hey presto you have yourself a Happy Cake! Enjoy!

SERVING OPTIONS:
You can eat these as they are which is yummy in it's self or for extra indulgence (but still very good for you) you can add a drizzle of honey and a dollop of greek yoghurt...delicious!!!
